OVEN SCRAMBLED EGGS

Hot milk

Butter, melted

Heat oven to 350 degrees.
Beat eggs slightly.
Add hot milk and salt; mix well.
Pour melted butter into baking dish, add egg mixture.
Bake for 20 minutes; stir, then bake 10 to 20 minutes longer (depending on amount).
Remove from oven, sprinkle with cheddar cheese and pepper or mozzarella cheese and basil. Let stand for 10 minutes before serving. |

Fresh vegetables, diced:
Zucchini & mushrooms OR
Red and green bell pepper & onions (1 tsp. minced garlic)

Preheat oven to 350 degrees.
Place vegetables in a microwave safe bowl, cover with plastic wrap and cook on high for 3 minutes. Set aside.
Mix eggs, cottage cheese, seasoning and salt in a large bowl. Add well-drained vegetables.
Pour half of mixture in greased baking dish (9”x12” for 8 servings; two 9” pie plates for 12 servings). Top with shredded cheeses; sprinkle with Parmesan. Pour remaining egg mixture on top.
Bake for 50 minutes or until middle is set.

| EGG & MAPLE SAUSAGE CASSEROLE
1 pkg. Pillsbury crescent rolls
1# Jimmy Dean Maple sausage, browned and drained
6 slices Swiss cheese
1 C. shredded sharp cheddar
4 oz. cream cheese
6 eggs
2 c. milk, warmed
Heat oven to 325 degrees. Spread crescent rolls over bottom of greased 9”x13” baking dish. Layer Swiss cheese over crescent rolls. Top with sausage, “pinches” of cream cheese, and shredded cheddar.
Beat eggs, add milk, mix well. Pour over ingredients in baking dish, sprinkle with salt and pepper.
Cover with foil; bake 40 minutes covered. Uncover and bake 30 minutes longer. Casserole should be golden brown and done in the center. Let stand 10 minutes before serving.
Serves 8. |

BREAKFAST LASAGNA
1 large bag frozen hash browns, thawed
1 can Cream of Mushroom soup
8 oz. sour cream
1 diced onion
1 pound bacon, diced and cooked
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
In 9”x13” baking pan layer as follows:
· Hash browns
· Soup and sour cream, mixed (cover hash browns)
· Onions
· Bacon
· Cheeses
Heat oven to 325 degrees. Cover with foil and bake for 1 hour. Remove foil and bake additional 5 minutes. Let stand 10 minutes before serving. |

BAKED VEGETABLE OMELET
2 C. Monterey Jack cheese, shredded
1 can chopped green chilies
1 medium onion, chopped
1 medium green bell pepper, chopped
1 c. fresh mushrooms, sliced
12 eggs
1/2 c. milk
1/4 tsp. salt
Dash of pepper
1 tsp. hot pepper sauce
In a greased 9”x9” baking dish (small clay dish), layer half of cheese, bell pepper, chilies, mushrooms, and onions. Repeat layers.
In a bowl, beat eggs, milk, hot pepper sauce, salt and pepper; pour over vegetable mixture.
Bake, uncovered, at 350 degrees for 45-50 minutes. Let stand for 10 minutes before serving. |

EGG CASSEROLE TOPPED WITH BREAD CRUMBS
8 – 12 eggs
1# bacon, chopped
3 T. butter
1/4 c. flour
2 c. milk
2 c. shredded cheese (cheddar, Jack, Mexican blend)
1/2 c. chopped fresh mushrooms
1-1/2 c. dry bread crumbs
Paprika
Melt butter in saucepan. Add flour; mix into a paste. Add milk, cook to make sauce. Add cheese.
Cook chopped bacon. Scramble eggs. Mix all ingredients together, except bread crumbs. Add mushrooms. Spread in 9”x13” baking dish. Cover with bread crumbs. Sprinkle with paprika. Refrigerate overnight.
Bake at 350 degrees for 30 minutes or until done. |
